Challerhocker, with its name derived from "sitting in the cellar" and pronounced as "holler hocker", is a Swiss cheese that undergoes a process of brine washing and spices before being aged for at least 12 months. This thermalized milk cheese boasts a dense and smooth texture, free of any holes or cracks. Thanks to its repeated brine washing and extended ageing, Challerhocker offers a unique depth of flavor and texture, setting it apart from other Swiss cheeses. Its initial scent and taste are a delightful combination of roasted peanuts, melted leeks, brown butter, sweet cream, and caramel.
